Preheat the oven to 180°C, place parchment paper on a tray, and in a small bowl mix sugar, and cinnamon together and place aside
In a medium size bowl, mix eggs, milk, vanilla, and salt, mix well till all ingredients are homogeneous.
Cut the toast slices into 2-3 pieces, dip each piece in the egg mixture, then place on the baking tray.
Brush some butter on each piece of toast, add a little of the sugar and cinnamon mixture on top.
Bake in a preheated oven for 15 mins, flip the pieces and brush them again with butter, and add more of the sugar & cinnamon mixture.
Place back in the oven for 15 mins till the toast is baked.
Set aside to cool down then brush with butter, serve with maple syrup & your favorite fruits, Enjoy!
